Ingredients

  • 2 cups fresh peaches peeled and diced
  • 1/4 cup granulated sugar
  • 1 tablespoon cinnamon
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1 package refrigerated pie crusts
  • 1 egg beaten
  • 1 tablespoon turbinado sugar for topping

Instructions

Prepare the Peach Filling

  • Peel and dice fresh peaches into small, bite-sized pieces. In a medium bowl, combine peaches, granulated sugar, cinnamon, lemon juice, and cornstarch. Stir gently until evenly coated. Let sit for 10 minutes.

Prepare the Pie Crust

  • Unroll refrigerated pie crusts on a clean surface. Using a round cutter (4-5 inches diameter), cut out circles. Reroll scraps to maximize usage, yielding about 8-10 circles.

Assemble the Hand Pies

  • Place 1 to 2 tablespoons of peach filling in the center of each dough circle, avoiding overfilling. Brush edges with beaten egg. Fold dough over filling into a half-moon shape. Press edges firmly and seal with a fork. Brush tops with more egg and sprinkle turbinado sugar.

Air Fry the Hand Pies

  • Preheat air fryer to 350°F (175°C). Spray basket with cooking spray. Place hand pies in a single layer without touching. Air fry 10-12 minutes until golden and filling bubbles. Reduce temperature if browning too fast.

Cool and Serve

  • Remove hand pies and transfer to a wire rack to cool slightly. Serve warm or at room temperature, optionally with vanilla ice cream or whipped cream.
