Ingredients

  • 3/4 cup whole wheat pastry flour
  • 1/2 cup almond meal
  • 2 tablespoons unsweetened cocoa powder
  • 2 tablespoons light brown sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup low-fat milk (1%)
  • 2 large eggs
  • 1 tablespoon canola oil plus more for waffle maker
  • 1 teaspoon vanilla extract

Instructions

  • Preheat your waffle maker according to the manufacturer’s instructions to ensure even cooking and a crispy exterior.
  • In a large mixing bowl, whisk together the whole wheat pastry flour, almond meal, cocoa powder, light brown sugar, baking powder, and salt until well combined.
  • In a separate bowl, whisk the low-fat milk, eggs, canola oil, and vanilla extract until smooth.
  • Pour the wet ingredients into the dry ingredients and gently mix until just combined. Do not overmix; some lumps are okay.
  • Lightly grease the preheated waffle maker with canola oil. Pour batter onto the center, close the lid, and cook for 3-5 minutes or until golden brown and crisp.
  • Carefully remove the waffles and serve warm with your favorite toppings like fresh fruit, whipped cream, or maple syrup.

Notes

  • For gluten-free waffles, substitute whole wheat pastry flour with a gluten-free flour blend.
  • These waffles freeze well; cool completely before freezing in a single layer, then store in an airtight container.
  • Add chocolate chips to the batter before cooking for extra indulgence.
