Ingredients

  • 1 prepared pie crust homemade or store-bought
  • 1 cup cornstarch
  • 1 cup sugar
  • 1 teaspoon salt
  • 4 large egg yolks
  • 2 cups whole milk
  • 1 cup heavy cream
  • 6 ounces chopped dark chocolate 70% cocoa
  • 2 tablespoons unsalted butter
  • 1 tablespoon vanilla extract

Instructions

Prepare the Pie Crust

  • If you’re using a store-bought pie crust, follow the package instructions for pre-baking. For a homemade crust, roll out your dough and fit it into a 9-inch pie dish. Bake at 350°F (175°C) for about 10-12 minutes, or until lightly golden. Once baked, set aside to cool.

Mix the Dry Ingredients

  • In a medium bowl, whisk together the cornstarch, sugar, and salt until well combined. This mixture will serve as the base for your filling, providing thickness and sweetness.

Combine Egg Yolks and Milk

  • In another bowl, whisk the egg yolks until they are well-beaten. Gradually add in the whole milk, whisking continuously to keep the yolks from cooking.

Cook the Mixture

  • In a saucepan over medium heat, combine the dry ingredients with the egg yolk mixture. Stir continuously until the mixture begins to thicken and bubble. This should take about 5-7 minutes.

Add Chocolate and Butter

  • Once thickened, remove the saucepan from heat. Immediately stir in the chopped dark chocolate, unsalted butter, and vanilla extract. Keep stirring until the chocolate and butter are fully melted and the mixture is smooth and glossy.

Fill the Pie Crust

  • Pour the chocolate filling into your prepared pie crust, smoothing the top with a spatula. Allow it to cool at room temperature for about 30 minutes, then transfer it to the refrigerator to chill for at least 2 hours, or until set.

Serve

  • Once the Chocolate Pie is set and chilled, it’s time to serve! Top each slice with a generous dollop of whipped cream and a sprinkle of chopped dark chocolate for an added touch of elegance.
