Ingredients

Brownie Base

  • 1/4 cup butter melted (57g)
  • 1/4 cup unsweetened cocoa powder
  • 1 1/2 cups granulated sugar approximately 113.5-170g
  • 1 teaspoon vanilla extract
  • pinch salt
  • 2 large eggs
  • 1 cup all-purpose flour 120g

Mint Layer

  • 16 pieces Mint Oreos crushed (232g)
  • 3 tablespoons milk 42g
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon espresso powder 0.6g

Instructions

Prepare the Brownie Base

  • Preheat your oven to 350°F (175°C). Grease your baking pan or line it with parchment paper for easy removal later. In a medium mixing bowl, melt 1/4 cup (57g) of butter. Once melted, add 1/4 cup (21g) of unsweetened cocoa powder and mix until well combined.

Mix the Brownie Batter

  • In the same bowl, add 1 1/2 cups (113.5-170g) of granulated sugar, 1 teaspoon of vanilla extract, and a pinch of salt. Stir in 2 large eggs, one at a time, until fully incorporated. Gradually mix in 1 cup (120g) of all-purpose flour until just combined.

Bake the Brownies

  • Pour the brownie batter into the prepared baking pan, spreading it evenly. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Allow the brownies to cool in the pan.

Prepare the Mint Layer

  • While the brownies are cooling, crush 16 (232g) Mint Oreos into fine crumbs. In a mixing bowl, combine the crushed Oreos with 3 tablespoons (42g) of milk, 1/2 teaspoon (2g) of vanilla extract, and 1/4 teaspoon (0.6g) of espresso powder. Mix until you achieve a smooth and spreadable consistency.

Assemble the Brownies

  • Once the brownies are completely cool, spread the mint layer evenly over the top. Use a spatula to ensure it’s smooth and reaches all corners of the brownies.

Final Touches

  • (Optional) For an extra touch, you can drizzle melted chocolate or a sprinkle of crushed Mint Oreos on top of the mint layer. Place the brownies in the refrigerator for about 30 minutes to allow the mint layer to set.

Slice and Serve

  • After the mint layer has set, slice the brownies into squares. Serve cold or at room temperature, and enjoy the rich chocolate and refreshing mint flavor in each bite!
