Ingredients

  • 300 g Strained Yogurt or Greek yogurt
  • 50 g Almonds coarsely chopped
  • 120 g Blueberries fresh or frozen
  • 1 tbsp Shredded Coconut unsweetened
  • 1 tbsp Honey
  • 300 g Chocolate finely chopped, dark or semi-sweet
  • 1 tbsp Sunflower Oil

Instructions

Prepare the Yogurt Mixture

  • In a mixing bowl, combine the strained yogurt, chopped almonds, blueberries, shredded coconut, and honey. Stir gently until all ingredients are evenly distributed.

Shape and Freeze the Bites

  • Using a spoon or cookie scoop, portion out the yogurt mixture onto a baking sheet lined with parchment paper. Aim for bite-sized portions, about 1 inch in diameter. Flatten each portion slightly to create a disk shape for easier coating later.
  • Place the baking sheet in the freezer for about 1-2 hours or until the yogurt bites are solid.

Melt the Chocolate

  • Melt the chocolate using a double boiler or microwave. If using the microwave, heat in 30-second intervals, stirring in between, until smooth. Add the sunflower oil and stir until combined.

Coat and Set

  • Remove the frozen yogurt bites from the freezer. Dip each bite into the melted chocolate, ensuring they are fully coated. Allow excess chocolate to drip off before placing them back on the parchment-lined baking sheet.
  • Return the baking sheet to the freezer for an additional 30 minutes to allow the chocolate to set completely.
