Ingredients

  • 1 cup granulated sugar
  • 1 cup light corn syrup
  • 1 cup peanuts preferably honey roasted
  • 1 teaspoon unsalted butter
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking soda
  • 1 ½ cups semi-sweet chocolate chips

Instructions

  • In a large microwave-safe bowl, combine 1 cup of granulated sugar and 1 cup of light corn syrup. Stir gently until well combined.
  • Place the bowl in the microwave and cook on high for 4 to 5 minutes until the mixture reaches a rolling boil.
  • Carefully remove the bowl. Stir in 1 cup of peanuts and 1 teaspoon of unsalted butter until peanuts are evenly coated.
  • Return the bowl to the microwave and cook for an additional 2 to 3 minutes until golden in color.
  • Remove the bowl again and stir in 2 teaspoons of vanilla extract and 1 teaspoon of baking soda. The mixture will bubble up.
  • Quickly pour the hot mixture onto a parchment-lined baking sheet and spread evenly. Allow to cool completely.
  • Melt 1 ½ cups of semi-sweet chocolate chips using a double boiler or microwave, stirring until smooth.
  • Break the brittle into pieces and dip each piece into the melted chocolate. Place back on parchment paper to set.
  • Let the chocolate harden at room temperature or refrigerate for about 15 minutes to speed up setting.
