  • 1/4 teaspoon lemon juice
  • 1/2 teaspoon almond extract
  • Confectioners sugar as needed for dusting

Instructions

Baking Instructions:

  • Step 1: Preheat your oven to 325°F (160°C).
  • Step 2: Line a baking sheet with parchment paper.
  • Step 3: In a large mixing bowl, sift together the almond flour, granulated sugar, cocoa powder, and a pinch of salt.
  • Step 4: In a separate medium bowl, beat the egg whites and lemon juice until soft peaks form.
  • Step 5: Gently fold the almond extract into the beaten egg whites.
  • Step 6: Carefully fold the egg white mixture into the dry ingredients until just combined.
  • Step 7: Using a cookie scoop, drop tablespoon-sized portions of dough onto the prepared baking sheet.
  • Step 8: Dust each cookie with confectioners’ sugar.
  • Step 9: Bake for 15-20 minutes, until set and slightly shiny.
  • Step 10: Let cool briefly before transferring to a wire rack.
