Chinese Chicken Pasta Salad with Sesame Dressing

A bright, crunchy chicken and rotini pasta salad tossed in a tangy sesame dressing.

Ingredients

  • 2 cups cooked, sliced chicken
  • 3 cups chopped romaine lettuce
  • 6 ounces cooked rotini pasta about 2 cups
  • 1 cup shredded red cabbage
  • 1/2 cup sliced red onion
  • 1/2 cup shredded carrots
  • 1/4 cup roasted almonds
  • 1/3 cup chow mein noodles
  • salt to taste
  • black pepper to taste
  • 2 tablespoons vegetable oil
  • 6 tablespoons rice vinegar
  • 1 teaspoon sesame oil
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame seeds
  • 1/2 teaspoon freshly ground black pepper
  • 1/8 teaspoon salt

Instructions

  • In a large bowl, combine the chopped romaine, sliced cooked chicken, cooked rotini, shredded red cabbage, sliced red onion, shredded carrots, roasted almonds, and chow mein noodles; toss to mix.
  • Season the salad mixture lightly with salt and pepper and set aside while you make the dressing.
  • In a medium bowl, whisk together vegetable oil, rice vinegar, sesame oil, honey, Dijon mustard, soy sauce, sesame seeds, 1/8 teaspoon salt, and 1/2 teaspoon freshly ground black pepper until smooth.
  • Pour the dressing over the salad and toss until everything is evenly coated.
  • Serve immediately or divide the dressing and toss with individual portions as desired.
