Ingredients

  • 8-10 chicken thighs with bone-in
  • Salt and pepper to season the chicken
  • 2-3 tsp olive oil adjust based on your pan size
  • 1 red onion cut into slivers (more onion can enhance flavor)
  • 8 oz sliced mushrooms buy pre-sliced for convenience
  • 1 tsp ground rosemary
  • Fresh chopped parsley for garnish (optional)

Instructions

  • Start by patting the chicken thighs dry with a paper towel. Season generously with salt and pepper on both sides.
  • In a large skillet or frying pan, heat 2-3 tsp. of olive oil over medium-high heat until hot but not smoking.
  • Place the seasoned chicken thighs skin-side down in the hot skillet. Sear for 5-7 minutes until golden-brown, then flip and sear the other side for another 5-7 minutes.
  • Remove the chicken from the skillet and set aside. Add the slivered red onion and sliced mushrooms to the skillet and sauté for about 5 minutes until onions are translucent and mushrooms softened.
  • Return the chicken thighs to the skillet. Sprinkle ground rosemary over the top. Cover the pan and reduce heat to low. Cook for 20-25 minutes until chicken is cooked through and juices run clear.
  • Transfer chicken and mushrooms to a serving platter. Drizzle any remaining juices over the top. Garnish with fresh chopped parsley if desired. Serve hot.
