Chicken Pesto Roll Ups

Ingredients

  • 2 lbs chicken breasts 4 medium/large chicken breasts
  • 1 tsp garlic salt or to taste
  • 1/4 tsp black pepper or to taste
  • 1/2 cup pesto sauce about 8 Tbsp total
  • 8 oz mozzarella cheese shredded (reserve 2 oz for topping)
  • 2 medium tomatoes thinly sliced into 16 rings
  • 1 cup cherry tomatoes optional
  • 1 Tbsp fresh basil leaves shredded (optional garnish)
  • 1 Tbsp olive oil
  • 1 Tbsp unsalted butter

Instructions

  • Preheat oven to 375°F (190°C). Place chicken breasts between two sheets of plastic wrap or parchment paper and gently pound to about 1/2 inch thickness using a meat mallet or rolling pin.
  • Sprinkle garlic salt and black pepper evenly over both sides of the chicken breasts.
  • Spread about 2 tablespoons of pesto sauce evenly over each chicken breast, leaving space around edges. Sprinkle 6 ounces of shredded mozzarella cheese over pesto, then add 4 slices of fresh tomato on each breast.
  • Carefully roll up each chicken breast, keeping cheese and pesto inside. Secure with toothpicks or kitchen twine if needed.
  • Drizzle olive oil in a baking dish and add remaining 2 ounces of shredded mozzarella cheese at the bottom. Arrange chicken roll-ups seam side down in the dish. Scatter cherry tomatoes around if using.
  • Dot tops of roll-ups with unsalted butter. Bake in preheated oven for 25-30 minutes until chicken is cooked through and cheese is bubbly and golden. Optionally broil 2-3 minutes for a golden finish.
  • Remove from oven and let rest a few minutes. Garnish with fresh shredded basil before slicing and serving.
