Ingredients

  • 1 1/4 cup milk
  • 1/2 cup heavy cream
  • 3 large eggs
  • 1 1/2 teaspoon kosher salt
  • 1 teaspoon fresh cracked pepper
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 2 large grilled chicken breasts about 1 1/2 lbs., thinly sliced or cubed to 1/4 inch pieces
  • 1 cup diced red bell pepper about 1 large pepper
  • 1 cup diced green bell pepper about 1 large pepper
  • 2 cups sharp cheddar cheese
  • 1 cup pepper jack cheese
  • 2 lbs frozen tater tots
  • 1/4 cup finely chopped green onions

Instructions

  • Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish with non-stick spray or butter.
  • In a large mixing bowl, whisk together milk, heavy cream, eggs, kosher salt, fresh cracked pepper, onion powder, and garlic powder until well combined and frothy.
  • Place half of the frozen tater tots evenly on the bottom of the greased baking dish. Sprinkle half of the diced red and green bell peppers over the tater tots.
  • Distribute the sliced or cubed grilled chicken evenly over the bell peppers.
  • Sprinkle 1 cup of sharp cheddar cheese and 1/2 cup of pepper jack cheese over the chicken layer.
  • Repeat the layering with the remaining tater tots, bell peppers, and chicken. Top with the rest of the cheese.
  • Slowly pour the egg mixture evenly over the layered casserole, ensuring it seeps down into all the nooks and crannies.
  • Cover the dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 15-20 minutes, until the cheese is bubbly and golden brown.
  • Remove the casserole from the oven and let it cool for a few minutes. Garnish with finely chopped green onions and fresh cilantro. Serve with sour cream if desired.
