Ingredients

  • 1 breast chicken sliced into 2 thin cutlets
  • 2 teaspoons olive oil

For the dressing:

  • 0.25 cup mayonnaise

  • 1 clove garlic minced
  • Salt and pepper to taste

Instructions

  • Slice the chicken breast into two thin cutlets to ensure quick and even cooking.
  • Heat 2 teaspoons of olive oil in a skillet over medium-high heat.
  • Season both sides of the chicken cutlets with salt and pepper.
  • Once the oil is hot, add the chicken to the skillet and cook for about 3-4 minutes on each side until cooked through and golden-brown.
  • Remove the chicken from heat and let it rest for a few minutes before slicing further if desired.
  • In a small bowl, whisk together mayonnaise, fresh lemon juice, Dijon mustard, Worcestershire sauce (or soy sauce), and minced garlic.
  • Season the dressing with salt and pepper to taste, adjusting lemon juice or mustard for preferred tanginess.
  • Wash and chop the romaine lettuce into bite-sized pieces and place into a large salad bowl.
  • Add croutons and freshly grated Parmesan cheese to the lettuce.
  • Slice the cooked chicken into thin strips or bite-sized pieces and place on top of the lettuce mixture.
  • Drizzle the Caesar dressing over the salad and toss gently to combine, ensuring even coating.
  • Serve the Chicken Caesar Salad immediately for best texture and flavor, optionally garnishing with extra Parmesan or croutons.
