Ingredients

  • 2 cups shredded rotisserie chicken
  • 2 cups shredded Pepper Jack cheese can also use cheddar or Monterey Jack
  • 1 can (15 ounce) black beans rinsed and drained
  • 1/2 cup salsa
  • 10 count Old El Paso soft flour tortillas 26-inch
  • oil for brushing or frying
  • 1/2 cup sour cream
  • 1 tablespoon adobo sauce from a can of chipotle peppers
  • 1 lime juiced

Instructions

Prepare the Filling

  • In a large bowl, combine the shredded rotisserie chicken, black beans, shredded cheese, and salsa. Mix everything together until well combined.

Warm the Tortillas

  • Warm the flour tortillas in a dry skillet over medium heat for about 15 seconds on each side, or cover them with a damp paper towel and microwave for 30 seconds to make them pliable.

Assemble the Flautas

  • Take a tortilla and place about 2-3 tablespoons of the chicken and black bean filling along one edge. Roll the tortilla tightly around the filling, tucking in the sides as you go. Place the rolled flauta seam-side down on a plate. Repeat with the remaining tortillas and filling.

Cook the Flautas

  • If frying, heat about 1 inch of oil in a skillet over medium heat. Once hot, carefully add the flautas seam-side down, frying in batches until golden brown and crispy, about 2-3 minutes per side.
  • If baking, preheat your oven to 400°F (200°C), place the flautas on a baking sheet, brush with oil, and bake for 15-20 minutes until crispy and golden.

Prepare the Sauce

  • In a small bowl, mix the sour cream with the adobo sauce and lime juice. This will be your zesty dipping sauce.

Serve and Enjoy

  • Once the flautas are cooked, remove them from the heat and let them cool slightly. Serve them hot with the creamy sauce on the side for dipping. Enjoy with toppings like avocado, cilantro, or extra salsa!
