Ingredients

  • 2 Boneless Skinless Chicken Breasts 10-12 ounces each
  • 3 tablespoons Olive Oil extra virgin
  • 2 cloves Garlic finely minced
  • 1 Shallot peeled and small diced
  • 1 ½ cups Heavy Whipping Cream
  • 1 cup Parmigiano Reggiano grated
  • 1 pound Fettuccine Pasta
  • Coarse Salt to season
  • Freshly Cracked Pepper to season
  • 1 cup Pasta Water reserved to adjust sauce consistency

Instructions

  • Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve about 1 cup of pasta water before draining the pasta in a colander.
  • While the pasta is cooking, heat 3 tablespoons of olive oil in a large skillet over medium-high heat. Season the chicken breasts with coarse salt and freshly cracked pepper. Sear the chicken in the hot oil for about 6-7 minutes on each side, or until the internal temperature reaches 165°F. Remove the chicken from the skillet and set aside to rest.
  • In the same skillet, add the minced garlic and diced shallot. Sauté for 2-3 minutes until fragrant and translucent, being careful not to burn the garlic.
  • Pour in the heavy whipping cream and bring it to a gentle simmer. Stir in the grated Parmigiano Reggiano, allowing it to melt into the cream, creating a smooth sauce. If the sauce is too thick, add a little reserved pasta water until desired consistency is reached.
  • Add the drained fettuccine to the skillet with the sauce and toss to coat. Slice the rested chicken and lay it atop the pasta. Mix everything until well combined and heated through.

Notes

  • Season chicken generously to enhance flavor.
  • Reserve pasta water to adjust sauce consistency as needed.
  • Use freshly grated Parmigiano Reggiano for the best melt and taste.
  • Reheat leftovers gently with a splash of cream or pasta water to revive the sauce.
