In a large mixing bowl, whisk together the oat flour, baking powder, baking soda, salt, and ground cinnamon until well combined.
In another bowl, cream the unsalted butter and brown sugar together until light and fluffy, about 2-3 minutes.
Add the egg, honey, unsweetened apple sauce, and vanilla extract to the butter-sugar mixture. Mix until smooth and well incorporated.
Gradually add the dry ingredients to the wet mixture, stirring until just combined. A few lumps are okay!
Gently fold in the quick oats, dark chocolate chips, raisins, and chopped pecans until evenly distributed.
Spread the mixture evenly into the prepared baking pan. Press down firmly with a spatula to create dense, chewy bars.
Bake for 20-25 minutes or until the edges are lightly golden.
Allow the granola bars to cool in the pan for about 10 minutes. Use the parchment paper overhang to lift the bars out and cool completely on a wire rack before cutting.
