Ingredients

  • 1 cup oat flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • 2 tbsp unsalted butter room temperature
  • 1/2 cup unpacked brown sugar
  • 1 large egg
  • 1/4 cup honey
  • 1/4 cup unsweetened apple sauce
  • 1/2 tsp vanilla extract
  • 2 cups quick oats
  • 1/2 cup dark chocolate chips
  • 1/2 cup raisins
  • 1/2 cup chopped pecans

Instructions

  • Preheat your oven to 350°F (175°C). Line an 8x8 baking pan with parchment paper, allowing some overhang for easy removal.
  • In a large mixing bowl, whisk together the oat flour, baking powder, baking soda, salt, and ground cinnamon until well combined.
  • In another bowl, cream the unsalted butter and brown sugar together until light and fluffy, about 2-3 minutes.
  • Add the egg, honey, unsweetened apple sauce, and vanilla extract to the butter-sugar mixture. Mix until smooth and well incorporated.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined. A few lumps are okay!
  • Gently fold in the quick oats, dark chocolate chips, raisins, and chopped pecans until evenly distributed.
  • Spread the mixture evenly into the prepared baking pan. Press down firmly with a spatula to create dense, chewy bars.
  • Bake for 20-25 minutes or until the edges are lightly golden.
  • Allow the granola bars to cool in the pan for about 10 minutes. Use the parchment paper overhang to lift the bars out and cool completely on a wire rack before cutting.
