Ingredients

  • 1 can (15-ounce) chickpeas drained, rinsed, and patted dry (no salt added or low salt versions recommended)
  • olive oil cooking spray or a tiny bit of olive oil may be substituted
  • 3 to 4 cups broccoli florets
  • 1 to 2 cups sugar snap peas
  • 2 to 3 tablespoons olive oil
  • 1/2 to 1 cup nutritional yeast
  • 1 teaspoon kosher salt or to taste
  • 1 teaspoon freshly ground black pepper or to taste
  • fresh parsley optional for garnishing

Instructions

Preheat Oven

  • Preheat your oven to 400°F (200°C). A hot oven is key to achieving that perfect crispiness.

Prepare and Roast Chickpeas

  • In a large mixing bowl, combine the drained chickpeas with a light spray of olive oil or a small amount of olive oil. Sprinkle in 1/2 cup of nutritional yeast, kosher salt, and black pepper. Toss until the chickpeas are evenly coated.
  • Spread the seasoned chickpeas in a single layer on a baking sheet lined with parchment paper. Roast in the preheated oven for about 20-25 minutes, stirring halfway through, until golden brown and crispy.

Prepare and Roast Vegetables

  • While the chickpeas are roasting, prepare the broccoli florets and sugar snap peas. In a mixing bowl, drizzle with 1 to 2 tablespoons of olive oil, then season with salt and pepper to taste. Toss to coat.
  • Once the chickpeas are done, remove them from the oven and add the broccoli and sugar snap peas to the baking sheet. Sprinkle with the remaining nutritional yeast (up to 1/2 cup) and toss everything together. Roast for an additional 15-20 minutes, or until the broccoli is tender and slightly crispy.

Finish and Serve

  • After roasting, remove from the oven and let cool for a few minutes. If desired, sprinkle with fresh parsley for a pop of color and flavor. Serve warm and enjoy your delicious Cheesy Roasted Chickpeas and Broccoli!
