Ingredients

Chicken

  • 1.5 pounds chicken breasts, skinless and boneless

Seasoning

  • 2 tablespoons fajita seasoning
  • 1 tablespoon vegetable oil

Vegetables

  • 2 medium bell peppers, cut into strips
  • 1 medium yellow onion, sliced

Cheese

  • 1.5 cups shredded cheese (cheddar, Monterey Jack, or a blend)

Garnish

  • fresh chopped cilantro for garnish

Instructions

  • Preheat oven to 375°F (190°C).
  • Cut chicken breasts into bite-sized pieces and toss with fajita seasoning.
  • In a large skillet, heat vegetable oil over medium heat.
  • Sauté onions and bell peppers for 5-7 minutes until tender.
  • Push vegetables to one side and cook seasoned chicken on the other side for 5-7 minutes until no longer pink.
  • Transfer the mixture to a greased baking dish and spread evenly.
  • Sprinkle shredded cheese over the top.
  • Bake for 20-25 minutes until cheese is bubbly and golden brown.
  • Remove from oven, let cool for a few minutes, and garnish with fresh cilantro.

Notes
