Ingredients

  • 2 pounds lean ground beef 90/10 or 93/7 fat content
  • 1/2 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 large yellow onion finely diced
  • 1/4 cup mayonnaise
  • 8 slices medium cheddar cheese
  • 6 ounces medium cheddar shredded (or use more sliced cheese if preferred)
  • 24 pieces dinner rolls or 2 packs of 12
  • 2 tablespoons unsalted butter melted, plus more to grease baking sheet
  • 1 tablespoon sesame seeds

Instructions

Prepare the Beef Mixture

  • Heat 1/2 tablespoon olive oil in a large skillet over medium heat. Add the finely diced yellow onion and cook until translucent, about 3-4 minutes. Add the ground beef, breaking it apart with a spatula. Season with 1 teaspoon salt, 1 teaspoon black pepper, and 1 teaspoon garlic powder. Cook until the beef is browned and fully cooked, about 7-8 minutes. Drain any excess fat if necessary.

Combine with Mayonnaise and Cheese

  • Transfer the cooked beef and onions to a mixing bowl. Allow it to cool slightly, then stir in 1/4 cup mayonnaise and the shredded cheddar cheese. Mix well to combine, ensuring the cheese starts to melt and binds the mixture together.

Prepare the Rolls

  • Preheat your oven to 350°F (175°C). Using a sharp knife, slice your 24 dinner rolls horizontally but keep them connected at the back if possible to create a slider bun sheet. This helps keep the sliders together while baking. Grease your baking sheet with melted butter to prevent sticking.

Assemble the Sliders

  • Spread the beef and cheese mixture evenly over the bottom half of the rolls. Place the 8 slices of medium cheddar cheese over the beef mixture, distributing them to cover as much surface area as possible. Carefully place the top half of the rolls back on.

Butter and Sprinkle

  • Brush the tops of the rolls generously with the remaining melted butter. Sprinkle 1 tablespoon sesame seeds evenly over all the slider tops to add a toasty, nutty crunch.

Bake and Serve

  • Place the baking sheet in the oven and bake for 12-15 minutes, or until the cheese is melted and the tops of the rolls are golden brown. Remove from the oven and let sit for a couple of minutes before slicing into individual sliders. Serve warm and enjoy!
