Ingredients

  • 1 cup high-quality whole milk ricotta cheese
  • 3/4 cup all-purpose flour
  • 3 large eggs
  • 2 tablespoons granulated white sugar
  • 1 teaspoon kosher salt
  • 1/2 teaspoon baking powder
  • Nonstick cooking oil spray for frying

Instructions

  • In a mixing bowl, combine the high-quality whole milk ricotta cheese, flour, eggs, granulated sugar, kosher salt, and baking powder. Use a whisk to blend everything together until smooth. The mixture should be thick yet pourable—perfect for spooning into the skillet.
  • Spray a nonstick skillet with cooking oil spray and place it over medium heat. Allow it to warm for a minute or two.
  • Using a spoon or a small ice cream scoop, drop dollops of the batter into the skillet, leaving space between each latke. Flatten them slightly with the back of the spoon for even cooking.
  • Cook the latkes for about 3-4 minutes on one side or until they turn a lovely golden brown. Flip them carefully using a spatula and cook for an additional 2-3 minutes on the other side.
  • Once cooked, transfer the latkes to a plate lined with paper towels to absorb any excess oil. Serve immediately while they are warm and crispy.
