  • 2 teaspoons kosher salt to enhance the flavors
  • 1 teaspoon grated ginger for a warm and zesty kick
  • 1 teaspoon minced garlic adds depth and aroma
  • 1 teaspoon garam masala a spice blend that brings warmth and complexity
  • 3/4 teaspoon ground turmeric provides beautiful color and health benefits
  • 1/4 teaspoon chili powder for a touch of heat
  • 1 tablespoon fresh lemon juice brightens the dish with acidity
  • 3 teaspoons clarified butter for richness and flavor
  • 1 large yellow onion diced, adds sweetness and depth
  • 1 to 2 hot green chili peppers sliced, adjust according to your spice preference
  • 6 cups cauliflower rice fresh or frozen
  • 1/4 cup chopped cilantro for freshness and garnish
  • lemon wedges for serving

Instructions

Marinate the Chicken

  • In a bowl, combine chicken chunks with kosher salt, grated ginger, minced garlic, garam masala, ground turmeric, chili powder, and lemon juice. Mix well and marinate for at least 30 minutes.

Sauté the Aromatics

  • Heat clarified butter in a large skillet over medium heat. Add diced onion and sauté until golden brown, about 5-7 minutes, stirring occasionally.

Cook the Chicken

  • Add marinated chicken to the skillet and cook for 6-8 minutes, stirring frequently, until cooked through and no longer pink.

Add the Cauliflower Rice

  • Stir in cauliflower rice and sliced green chili peppers. Cook for an additional 5-7 minutes until cauliflower softens and absorbs flavors.

Finish with Cilantro

  • Remove skillet from heat and stir in chopped cilantro for a burst of freshness.

Serve and Enjoy!

  • Transfer to serving dishes, garnish with additional cilantro, and serve with lemon wedges. Squeeze lemon juice on top before eating.

Notes

  • For extra flavor, add whole spices like cardamom pods or cinnamon sticks when sautéing the onions.
  • Thaw and drain frozen cauliflower rice before cooking to avoid excess moisture.
  • Let the dish rest a few minutes after cooking to allow flavors to meld beautifully.
  • Leftovers reheat well in a skillet, making this dish great for meal prep.
  • Substitute chicken with turkey, tofu, or chickpeas for different dietary preferences.
