Ingredients

  • 4 medium peaches halved and pitted
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 4 whole wheat pitas
  • 8 ounces burrata cheese torn into pieces
  • 1/4 cup fresh basil leaves
  • salt and pepper to taste
  • balsamic glaze for drizzling

Instructions

  • Start by washing the peaches, then carefully halve and pit them. Keep the skin on for added texture and nutrients. In a large skillet, heat the olive oil over medium heat. Place the peach halves cut-side down and cook for about 3-4 minutes until they develop a beautiful golden caramelization. Drizzle the honey over the peaches, then gently flip them and cook for another 2 minutes. Remove from heat and set aside.
  • While the peaches are caramelizing, warm your whole wheat pitas. You can do this on a grill, in a dry skillet, or directly on a gas burner flame for a few seconds on each side. Warming the pitas makes them pliable and enhances their flavor.
  • Carefully cut each pita in half to create pockets. Stuff each half with torn pieces of burrata cheese. The creamy texture of burrata pairs perfectly with the sweet peaches.
  • Place two peach halves inside each pita pocket. Tear fresh basil leaves and sprinkle them generously over the peaches and burrata. Season lightly with salt and pepper to taste.
  • Drizzle balsamic glaze over the stuffed pitas for a tangy, sweet finish that ties all the flavors together beautifully.
