Preheat your oven to 425°F (220°C). Wash and peel the sweet potato, then cut it into evenly sized fries.
Toss the fries in 2 tablespoons of olive oil, 1 teaspoon of paprika, and a pinch of salt. Spread them out in a single layer on a baking sheet lined with parchment paper.
Place the baking sheet in the oven and roast for about 25-30 minutes, turning halfway through to ensure even crisping.
While the fries are roasting, combine 1 pound of ground turkey with 1 tablespoon of Cajun seasoning, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/4 teaspoon black pepper, and 1/4 teaspoon salt in a large bowl. Mix gently until spices are evenly incorporated.
Divide the turkey mixture into 4 equal portions and shape each into a patty about 3/4 inch thick.
Heat a non-stick skillet or grill pan over medium-high heat and cook patties for 5-6 minutes per side, or until internal temperature reaches 165°F (74°C). Avoid pressing on patties.
While patties cook, slice avocado and wash lettuce leaves. Toast whole wheat buns if desired.
Assemble burgers by placing lettuce on bottom bun, then turkey patty, sliced avocado, and top bun. Serve immediately with sweet potato fries.
