Ingredients

  • 2 pounds chicken wings fresh and trimmed

  • 4 ounces unsalted butter melted
  • 2 teaspoons lemon pepper seasoning adjust to taste
  • 1/2 teaspoon freshly grated lemon zest for brightness and zing

Instructions

  • Pat your 2 pounds of chicken wings dry with paper towels. Separate whole wings into drumettes and flats if desired.
  • Pour vegetable or canola oil into a deep frying pan or deep fryer. Heat the oil to between 350°F and 375°F, using a thermometer to maintain temperature.
  • Carefully add wings in batches to the hot oil. Fry for about 8-10 minutes until golden brown and cooked through (internal temp 165°F). Remove and drain on wire rack or paper towels.
  • Melt 4 ounces of unsalted butter in a mixing bowl. Stir in 2 teaspoons lemon pepper seasoning and 1/2 teaspoon freshly grated lemon zest.
  • Add the freshly fried wings to the lemon pepper butter sauce. Toss gently until wings are fully coated.
  • Transfer wings to a serving platter and enjoy with your favorite sides or dipping sauces.
