Ingredients

  • 2 cups brown sugar
  • 0.5 cup butter softened
  • 0.5 cup vegetable oil
  • 2 eggs
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 tsp vanilla extract
  • 3 cups all-purpose flour
  • white sugar for rolling

Instructions

  • Preheat your oven to 350°F (175°C) to ensure even baking and golden-brown cookies.
  • In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy using a spatula or mixer.
  • Add the vegetable oil, eggs, and vanilla extract to the creamed mixture and mix until smooth and creamy.
  • In another bowl, whisk together the all-purpose flour, baking soda, baking powder, and salt.
  • Gradually add the dry ingredients to the wet ingredients, stirring just until combined to avoid tough cookies.
  • Optionally, chill the dough for about 30 minutes to enhance flavor and make handling easier.
  • Scoop out portions of dough using a cookie scoop or tablespoon, roll into balls, then coat each ball in white sugar.
  • Place the sugar-coated dough balls on a parchment-lined baking sheet, spacing about 2 inches apart.
  • Bake for 10-12 minutes until edges are lightly golden but centers remain soft.
  • Remove cookies from oven and cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
