Ingredients

  • 2 1/4 cups whole wheat flour 250g
  • 2 3/4 cups wheat bran or wheat germ 120g
  • 4 cups all-purpose flour 500g
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 ounces butter salted or unsalted, melted
  • 2 1/2 cups buttermilk 600ml
  • 2 teaspoons molasses

Instructions

Brown Bread Directions

  • Begin by preheating your oven to 350°F (175°C) to ensure the bread bakes evenly.
  • Grease your loaf pan with butter or cooking spray to prevent sticking.
  • In a large mixing bowl, whisk together the whole wheat flour, wheat bran (or germ), all-purpose flour, baking soda, and salt until well combined.
  • Melt the butter over low heat in a small saucepan, then remove from heat and let it cool slightly.
  • In another bowl, mix the buttermilk and molasses together, then add the melted butter and stir until well blended.
  • Pour the wet ingredients into the dry ingredients and gently fold them together using a rubber spatula. Avoid overmixing to keep the bread light.
  • Spoon the batter into the prepared loaf pan and smooth the top with the spatula.
  • Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
  • Remove the bread from the oven and let it cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
