Step 1: Prepare Your Ingredients

  • Before you begin assembling, make sure your phyllo dough is fully thawed according to package instructions. Preheat your oven to 375°F (190°C). Cook the turkey bacon until crisp and crumble it into bite-sized pieces. Cut the brie into small cubes, removing the rind if you prefer a milder texture. Chop the walnuts and rosemary if you plan to include them—they add wonderful texture and aroma but are completely optional.

Step 2: Layer and Brush the Phyllo Sheets

  • Lay one sheet of phyllo dough flat on a clean surface and brush it lightly with melted butter. Place another sheet on top and brush again. Repeat this process until you have 3-4 layers stacked and buttered. This layering ensures the bundles will be crisp and golden when baked.

Step 3: Cut the Phyllo and Add Filling

  • Cut the stacked phyllo sheets into squares about 4x4 inches. On each square, place a small piece of brie in the center, followed by a teaspoon of black fig jam. Sprinkle a pinch of crumbled turkey bacon and walnuts on top, then add a little chopped rosemary if using. Season with a tiny pinch of salt and freshly ground black pepper.

Step 4: Fold and Seal the Bundles

  • Gather the corners of each square up toward the center and pinch them together to form a small bundle. If the dough is sticky or doesn’t want to stay closed, brush a bit more melted butter on the edges before pinching. Place the bundles seam-side down on a baking sheet lined with parchment paper.

Step 5: Bake to Golden Perfection

  • Brush the tops of each bundle with additional melted butter to encourage browning. Bake in the preheated oven for 12-15 minutes, or until the phyllo is crisp and golden brown. Keep a close eye toward the end to avoid burning.
