Ingredients

  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 0.5 medium onion chopped
  • 2 cloves garlic minced
  • 1 cup uncooked orzo pasta
  • 2.5 cups chicken or vegetable broth
  • 1 package Boursin cheese 5.2 oz, softened
  • 2 cups fresh baby spinach packed
  • 2 cups cooked chicken chopped/shredded
  • Salt & pepper to taste
  • Fresh chives chopped (optional, to taste)

Instructions

  • Begin by heating the olive oil and butter in a large skillet over medium heat. Once melted and bubbly, add the chopped onion and sauté for about 3-4 minutes until translucent. Next, stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
  • Add the uncooked orzo pasta to the skillet, stirring well to coat it with the onion and garlic mixture. Cook for about 1-2 minutes, allowing the orzo to toast lightly and absorb the flavors.
  • Pour in the chicken or vegetable broth, bringing the mixture to a gentle boil. Reduce the heat to low and cover the skillet, allowing the orzo to cook for about 10-12 minutes, or until al dente. Stir occasionally to prevent sticking.
  • Once the orzo is cooked, remove the skillet from heat. Add the softened Boursin cheese, stirring until it melts and creates a creamy sauce that envelops the pasta.
  • Gently fold in the fresh baby spinach and chopped chicken, allowing the spinach to wilt and the chicken to heat through. Season with salt and pepper to taste.
  • Serve the Boursin Orzo with Chicken warm, garnished with freshly chopped chives if desired. Enjoy the creamy richness and delightful flavors of this comforting dish!
