Ingredients

  • 3 medium peaches pitted and sliced
  • 1 cup brown sugar
  • 1/4 cup unsalted butter
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 2 tablespoons bourbon optional but recommended

Instructions

Prepare the Peach Topping

  • Preheat your oven to 350°F (175°C). In a 10-inch oven-safe skillet, melt the unsalted butter over medium heat. Stir in the brown sugar until it dissolves and the mixture is smooth and bubbly.

Arrange the Peaches

  • Remove the skillet from heat and carefully arrange the sliced peaches evenly over the brown sugar mixture in a single layer. Set aside while preparing the batter.

Mix Dry Ingredients

  • In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.

Combine Wet Ingredients

  • In a large bowl, beat together the granulated sugar, vegetable oil, and eggs until smooth and creamy. Add vanilla extract, buttermilk, and bourbon; mix until incorporated.

Make the Batter

  • Gradually fold the dry ingredients into the wet ingredients until just combined. Avoid overmixing.

Assemble and Bake

  • Pour the batter evenly over the peaches in the skillet, spreading gently. Bake in the preheated oven for 35-40 minutes until a toothpick inserted in the center comes out clean and edges are golden brown.

Cool and Serve

  • Let the cake cool in the skillet for 10-15 minutes. Carefully invert the skillet onto a serving plate so the caramelized peaches are on top. Serve warm or at room temperature, optionally with whipped cream or vanilla ice cream.

Equipment

  • 10-inch oven-safe skillet
  • Medium Bowl
  • Large Bowl
  • Spatula
  • Oven

Notes

  • Use ripe but firm peaches to maintain texture during baking.
  • Ensure your skillet is oven-safe, cast iron is ideal for even heat.
  • Resting the cake after baking makes flipping easier and prevents breaking.
  • Substitute buttermilk with milk plus lemon juice or vinegar if needed.
  • Add a pinch of cinnamon or nutmeg over peaches for extra spice.
