Ingredients

  • 1 small beet peeled and cut into small pieces
  • 1 Red Delicious apple cored and cut into small pieces
  • 0.5 pound frozen mixed berries a medley of blueberries, raspberries, and strawberries
  • 0.5 cup water or juice to adjust the consistency as desired

Instructions

  • Peel and cut the beet into small pieces to make it easier to blend. Core and chop the Red Delicious apple into small chunks.
  • Add the chopped beet, apple pieces, and frozen mixed berries to your high-speed blender.
  • Pour in the 1/2 cup of water or juice. Juice can be used to make it sweeter if desired.
  • Toss in the 3-4 ice cubes for a refreshing chill. Add more ice if you prefer a thicker consistency.
  • Blend on high until everything is smooth and creamy. Add more water or juice if the mixture is too thick.
  • Taste the smoothie and adjust sweetness by adding honey or maple syrup if desired. Blend again if needed.
  • Pour the smoothie into a glass or mason jar. Optionally, garnish with a few berries or a sprinkle of chia seeds.

Notes

  • Store leftover smoothie in an airtight container in the refrigerator for up to 24 hours; shake well before drinking.

  • You can substitute cooked or canned beets, pears or bananas for apple, and any berries or liquids like coconut water or almond milk.
