Ingredients

For the Filling:

  • 1 lb Ground beef or ground turkey/chicken
  • 1/4 medium Onion finely diced
  • 1/4 cup Water
  • to taste Taco seasoning use entire recipe for best flavor

For Assembling:

  • 20 pieces Corn tortillas
  • 1.5 cups Shredded cheese Mexican blend or cheddar

For Frying:

  • as needed Oil for frying

Toppings:

  • to taste Shredded lettuce
  • to taste Diced tomatoes
  • to taste Sour cream
  • to taste Salsa
  • to taste Guacamole

Instructions

Cooking Instructions

  • Heat half a tablespoon of avocado oil or olive oil in a skillet over medium heat. Add the diced onion and sauté for 2-3 minutes until translucent. Stir in the ground beef and cook until browned, about 5-7 minutes.
  • Drain any excess fat from the beef. Add taco seasoning and water to the skillet, stirring well. Let it simmer for 3-4 minutes.
  • Heat corn tortillas in a dry skillet for 30 seconds on each side or wrap in a damp paper towel and microwave for 30 seconds to make them pliable.
  • Place about 2 tablespoons of the beef filling and a sprinkle of cheese in the center of each tortilla. Roll them up tightly.
  • For frying, heat enough oil in a frying pan and fry the taquitos until golden brown, about 2-3 minutes per side. For baking, preheat oven to 400°F (200°C) and bake for 15-20 minutes until crispy.

Notes

  • Store taquitos in an airtight container in the fridge for up to 3 days.
