Heat half a tablespoon of avocado oil or olive oil in a skillet over medium heat. Add the diced onion and sauté for 2-3 minutes until translucent. Stir in the ground beef and cook until browned, about 5-7 minutes.
Drain any excess fat from the beef. Add taco seasoning and water to the skillet, stirring well. Let it simmer for 3-4 minutes.
Heat corn tortillas in a dry skillet for 30 seconds on each side or wrap in a damp paper towel and microwave for 30 seconds to make them pliable.
Place about 2 tablespoons of the beef filling and a sprinkle of cheese in the center of each tortilla. Roll them up tightly.
For frying, heat enough oil in a frying pan and fry the taquitos until golden brown, about 2-3 minutes per side. For baking, preheat oven to 400°F (200°C) and bake for 15-20 minutes until crispy.
