Ingredients

  • 2 tablespoons dark soy sauce for marinating and sauce
  • 2 tablespoons soy sauce for marinating and sauce
  • 1 tablespoon oyster sauce optional
  • 2 tablespoons vegetable or canola oil for cooking beef and vegetables
  • 1 to 2 tablespoons toasted sesame oil for flavor
  • 1 pound sirloin or flank steak cut into 1/4-inch strips
  • 1 cup white onion diced small
  • 1 1/2 cups frozen peas and carrots
  • 2 or 3 large eggs
  • 4 cups cooked rice day-old rice preferred
  • scallions thinly sliced, optional for garnish

Instructions

Step 1: Prepare the Ingredients

  • Gather all your ingredients. Ensure rice is fully cooked and cooled. Day-old rice works best to prevent clumping.

Step 2: Marinate the Beef

  • In a medium bowl, combine beef strips with 1 tablespoon dark soy sauce and 1 tablespoon soy sauce. Marinate for 10-15 minutes.

Step 3: Cook the Beef

  • Heat 2 tablespoons vegetable or canola oil in a large skillet or wok over medium-high heat. Add marinated beef in a single layer. Sear 2-3 minutes until browned. Remove and set aside.

Step 4: Sauté the Vegetables

  • Add more oil if needed. Toss in diced onion and sauté 2-3 minutes until translucent. Add frozen peas and carrots; stir-fry 2 minutes until heated through.

Step 5: Scramble the Eggs

  • Push vegetables to the side. Crack 2 or 3 eggs into the pan and scramble until fully cooked. Stir to combine with vegetables.

Step 6: Add the Rice

  • Add cooked rice to skillet, breaking apart clumps. Stir well to mix rice evenly with vegetables and eggs.

Step 7: Add Sauces and Beef

  • Pour remaining dark soy sauce, soy sauce, and oyster sauce (if using) over the rice. Mix thoroughly. Add cooked beef back in. Drizzle toasted sesame oil and stir-fry 2-3 minutes until heated through.

Step 8: Garnish and Serve

  • Remove from heat and transfer to serving plates. Garnish with thinly sliced scallions if desired. Enjoy!
