Ingredients

  • 1 cup all-purpose flour spooned into measuring cup and leveled-off
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter softened, (1 stick)
  • 1 cup sugar
  • 2 large eggs
  • 1 cup mashed very ripe bananas about 2 to 3 large bananas
  • 2 tablespoons fresh lemon juice from 1 lemon
  • 1 teaspoon vanilla extract

Instructions

  • Preheat your oven to 350°F (175°C). This ensures that your banana bread bakes evenly.
  • Grease your loaf pan with butter or use parchment paper for easy removal.
  • In a medium bowl, whisk together the all-purpose flour, baking soda, baking powder, and salt. Set aside.
  • In a large mixing bowl, beat the softened butter and sugar together using a whisk or electric mixer until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition to ensure they are fully incorporated.
  • Stir in the mashed bananas, fresh lemon juice, and vanilla extract until well combined.
  • Gradually add the dry ingredients to the wet mixture, folding gently with a spatula until just combined. Be careful not to overmix, as this can result in a dense loaf.
  • Pour the batter into your prepared loaf pan, smoothing the top with a spatula.
  • Bake in the preheated oven for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
  • Once baked, remove the banana bread from the oven and let it cool in the pan for about 10 minutes, then transfer it to a cooling rack to cool completely. Slice and serve warm, or store it for later!
