Ingredients

For the Chicken Wings and Marinade

  • 2.5 pounds chicken wings fresh or thawed
  • 3 tablespoons butter melted, or olive oil
  • 2 garlic cloves finely minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried rosemary
  • 1 teaspoon ground cumin
  • 1 teaspoon kosher salt

For the Cheese and Herbs

  • 1/4 cup Parmesan cheese grated
  • 2 tablespoons fresh basil minced

For the Dipping Sauce

  • 1 cup blue cheese dressing
  • 1-2 teaspoons Dijon mustard optional, adjust to taste

Instructions

Preparation

  • Preheat your oven to 425°F (220°C) to ensure a crispy texture.
  • Rinse the chicken wings under cold water and pat them dry with paper towels to remove excess moisture.
  • In a mixing bowl, combine melted butter (or olive oil), minced garlic, dried oregano, dried rosemary, ground cumin, and kosher salt. Stir until well mixed.
  • Add the chicken wings to the bowl and toss them in the marinade until evenly coated.
  • Sprinkle grated Parmesan cheese and minced fresh basil over the wings. Toss again to distribute evenly.
  • Line a baking sheet with parchment paper (optional) and arrange the wings in a single layer with space between them for optimal airflow.

Cooking and Serving

  • Bake the wings in the preheated oven for 35-45 minutes, flipping halfway through, until golden brown and crispy.
  • While baking, mix blue cheese dressing with Dijon mustard in a small bowl, adjusting mustard to taste.
  • Serve the hot wings with the blue cheese dipping sauce on the side.

Equipment

  • Baking Sheet
  • Parchment Paper
  • Garlic press
  • Mixing Bowl

Notes

  • Pat the wings dry thoroughly before marinating to achieve maximum crispiness.
  • Do not overcrowd the baking sheet to ensure even cooking and browning.
  • Flip wings halfway through baking for uniform crispiness on both sides.
  • Substitute chicken drumsticks for wings if desired.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat in the oven to maintain crispiness.
