Ingredients

  • 8 ounces feta cheese block
  • 1/4 cup sun-dried tomatoes, chopped
  • 2 cups cherry tomatoes
  • 1/4 cup olive oil
  • 1 teaspoon Italian seasoning blend
  • Salt and pepper to taste
  • Fresh basil for garnishing

Instructions

  • Begin by preheating your oven to 400°F (200°C). This allows the feta to melt perfectly and the tomatoes to roast beautifully.
  • In a mixing bowl, combine the chopped sun-dried tomatoes, cherry tomatoes, olive oil, Italian seasoning, salt, and pepper. Mix well to ensure the tomatoes are evenly coated.
  • Place the feta cheese block in the center of your baking dish. Surround the feta with the tomato mixture, making sure to pour any remaining olive oil over the top of the cheese.
  • Transfer the baking dish to the preheated oven and bake for 25-30 minutes, or until the feta is golden and soft. The tomatoes should also be blistered and juicy.
  • Once baked, remove the dish from the oven and let it cool for a few minutes. Garnish with fresh basil before serving. Enjoy with crusty bread, crackers, or as a topping for salads.
