Ingredients

  • 12 taco shells taco shells
  • 1 tablespoon oil such as olive oil or vegetable oil
  • 1 onion diced
  • 2 cloves garlic crushed
  • 4 cups shredded chicken cooked and skinless
  • 2 tablespoons taco seasoning make sure it’s free of any non-halal additives
  • 7 ounces salsa 200g
  • 1 cup refried beans

Instructions

  • Preheat your oven to 375°F (190°C). This temperature is perfect for crisping your taco shells without burning them.
  • Heat the oil in a large skillet over medium heat. Add the diced onion and sauté for about 4-5 minutes, or until the onions become translucent and fragrant. Add the crushed garlic and cook for an additional 30 seconds to 1 minute, being careful not to burn it.
  • Stir in the shredded chicken, taco seasoning, salsa, and refried beans. Mix everything thoroughly so the chicken is well-coated with the seasoning and beans are evenly distributed. Let the mixture cook for about 5 minutes, stirring occasionally, until everything is heated through and the flavors meld beautifully.
  • Place the taco shells on a baking sheet standing upright. Spoon the chicken mixture evenly into each shell, filling them generously but not overstuffing.
  • Bake in the preheated oven for 10-12 minutes. This will allow the shells to crisp up nicely and the filling to be hot and bubbly.
  • Remove the tacos from the oven carefully and serve immediately. For extra flair, top with your favorite garnishes like shredded lettuce, diced tomatoes, cheese, sour cream, or chopped cilantro.
