Instructions

  • Preheat your oven to 425°F (220°C). A hot oven is key to achieving that nice, crispy exterior.
  • In a mixing bowl, combine 2 teaspoons of smoked paprika, 1 teaspoon of cayenne pepper, 1 teaspoon of dried thyme, 1 teaspoon of dried oregano, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, ½ teaspoon of black pepper, and ½ teaspoon of sea salt. Mix well to create a uniform spice blend.
  • Pat the chicken thighs dry with paper towels. This step is crucial for getting that crispy skin. In a large bowl, drizzle 2 tablespoons of avocado oil over the chicken thighs and rub it in. Then, sprinkle the spice mixture over the thighs, making sure to coat them generously on all sides.
  • Line a baking sheet with parchment paper for easier cleanup. Place the seasoned chicken thighs skin-side up on the baking sheet, spaced evenly apart.
  • Bake the chicken in the preheated oven for about 35-40 minutes or until the skin is crispy and the internal temperature reaches 165°F (75°C). If you like extra crispiness, you can broil for an additional 2-3 minutes at the end.
  • Once done, remove the chicken from the oven and let it rest for about 5-10 minutes. This helps the juices redistribute throughout the meat. Serve with your favorite sides and enjoy the explosion of flavors!
