Instructions

Step 1: Prepare the Ingredients

  • Slice chicken sausage into bite-sized rounds. Dice onion, mince garlic, peel and cube butternut squash, halve Brussels sprouts, and chop apple into small pieces.

Step 2: Sauté the Sausage

  • Heat olive oil in skillet over medium heat. Add sliced chicken sausage and cook until browned on both sides, about 4-5 minutes. Remove sausage and set aside.

Step 3: Cook the Vegetables

  • Add diced onion to skillet and sauté until translucent, about 3 minutes. Add minced garlic and cook for another 30 seconds until fragrant. Toss in butternut squash and Brussels sprouts, stirring occasionally, until vegetables soften and caramelize, roughly 8-10 minutes.

Step 4: Add the Apple and Herbs

  • Stir in chopped apple, dried thyme, and rosemary. Season generously with salt and pepper. Cook for 3-4 minutes until apple softens slightly but still retains some bite.

Step 5: Combine and Finish Cooking

  • Return browned chicken sausage to skillet, mixing everything together. Cook for an additional 2-3 minutes so flavors meld and everything is heated through.

Step 6: Garnish and Serve

  • Turn off heat and sprinkle freshly chopped parsley over skillet. Serve warm straight from the pan.
