Place the flour in one shallow bowl. In a second bowl, beat the egg until smooth. In a third bowl, combine the whole-grain breadcrumbs and grated parmesan cheese.
Take each spear and roll it first in the flour, shaking off any excess. Then dip it into the beaten egg, letting the excess drip back into the bowl. Finally, roll it in the breadcrumb and parmesan mixture until fully coated. Place coated spears on a parchment-lined baking sheet.
