Ingredients

  • 1 pound raw shrimp thawed, peeled, and deveined
  • 3 small mixed bell peppers sliced (use a combination of red, green, and yellow for vibrant color)
  • 1 small yellow onion sliced
  • 1 tablespoon vegetable oil divided (you can substitute with olive oil or avocado oil)
  • 1 tablespoon fajita seasoning divided (store-bought or homemade)
  • 1 teaspoon paprika for homemade fajita seasoning
  • 1 teaspoon chili powder for homemade fajita seasoning
  • 0.5 teaspoon garlic powder for homemade fajita seasoning
  • 0.5 teaspoon onion powder for homemade fajita seasoning

Instructions

  • Rinse your shrimp under cold water and pat them dry with paper towels. Slice the bell peppers and onion into thin strips, about ¼-inch wide, so they cook evenly in the air fryer.
  • In a medium bowl, toss the sliced bell peppers and onions with half the vegetable oil and half of the fajita seasoning. Make sure all the pieces are well coated with the seasoning and oil for maximum flavor.
  • In a separate bowl, combine the shrimp with the remaining vegetable oil and fajita seasoning. Toss until the shrimp are evenly coated.
  • Preheat your air fryer to 400°F (200°C) for about 3-5 minutes to ensure an even cooking temperature.
  • Place the seasoned bell peppers and onions in the air fryer basket in a single layer. Cook for 5 minutes, shaking the basket halfway through to promote even cooking.
  • After the veggies have begun to soften, add the shrimp on top in a single layer. Continue cooking everything together for another 5-7 minutes, shaking the basket once or twice during cooking. The shrimp should turn pink and opaque, and the veggies should be tender yet slightly crisp.
  • Once cooked, transfer the shrimp and vegetable mixture to a serving platter. Serve with warm tortillas and your favorite toppings like lime wedges, cilantro, sour cream, or avocado slices.
