Ingredients

  • 1 French baguette sliced into ½-inch thick pieces
  • 1 cup ricotta cheese whole milk ricotta works best for creaminess
  • 2 ripe peaches diced, choose peaches that are fragrant and slightly soft
  • 2 tablespoons honey for natural sweetness
  • 1 tablespoon olive oil extra virgin for best flavor
  • to taste salt just a pinch to enhance flavors
  • fresh basil leaves for garnish, adds a lovely herbal aroma and color

Instructions

  • Slice the French baguette into ½-inch thick pieces. Brush each slice lightly with olive oil on both sides.
  • Place the oiled baguette slices in a single layer inside the air fryer basket. Set to 375°F (190°C) and cook for 5-7 minutes, flipping halfway through until golden and crispy. Remove and let cool slightly.
  • In a bowl, combine ricotta cheese with a pinch of salt. Gently fold in the diced peaches and drizzle with honey. Mix just enough to combine without breaking down the peaches.
  • Spoon a generous amount of the peach-ricotta mixture onto each toasted baguette slice.
  • Top each bruschetta with a fresh basil leaf. Serve immediately for the best texture and flavor.
