Ingredients

  • 1 pound fish fillets (such as cod, haddock, or tilapia), patted dry and salted
  • 0.5 cup all-purpose flour
  • 1 teaspoon salt divided
  • 0.5 teaspoon ground black pepper divided
  • 2 eggs
  • 1 cup dried breadcrumbs (for gluten-free option, use gluten-free breadcrumbs)

Instructions

  • Cut fish fillets into evenly sized sticks about 3 to 4 inches long and 1 inch wide. Pat dry with paper towels. Lightly sprinkle half of the salt and black pepper over the fish sticks.
  • In three shallow bowls, place the all-purpose flour mixed with half a teaspoon salt and quarter teaspoon black pepper in the first bowl; beat eggs in the second bowl; place dried breadcrumbs in the third bowl.
  • Coat each fish stick first in the seasoned flour, shaking off excess, then dip into beaten eggs, and finally roll in breadcrumbs until evenly coated. Place breaded fish sticks on a plate or tray.
  • Preheat the air fryer to 400°F (200°C) for about 5 minutes.
  • Lightly spray or brush air fryer basket with oil to prevent sticking. Arrange fish sticks in a single layer without overlapping. Cook for 10 to 12 minutes, flipping halfway through until golden brown and cooked through.
  • Remove fish sticks from air fryer and serve immediately with your favorite dipping sauces.
