If your air fryer requires preheating, set it to 360°F (185°C) and start preheating.
Peel the carrots, trim the ends, and cut them into diagonal slices. For very thick sections, cut them in half lengthwise before slicing diagonally so the pieces are similar in length and thickness.
Place the sliced carrots in a mixing bowl.
Add 2 T olive oil (or slightly less if you prefer), 1/2 tsp salt, and fresh-ground black pepper to taste.
Toss the carrots until they are evenly coated with the oil, salt, and pepper.
Spread the carrots in a single layer in the air fryer basket. If necessary, cook in batches to avoid overcrowding.
Air fry at 360°F (185°C) for 7–8 minutes. Remove the basket, flip or shake the carrots so they turn over, then return the basket to the air fryer.
Cook an additional 5–6 minutes, checking after a few minutes for doneness—air fryers vary. Cook a minute or two longer if you prefer carrots more browned or tender.
Remove the carrots from the air fryer and adjust seasoning with more salt or black pepper if desired. Serve hot.
