In a medium mixing bowl, combine the shredded chicken, softened cream cheese, buffalo sauce, shredded mozzarella, sliced green onion, and garlic powder; stir until evenly mixed.
Spoon a heaping 2 teaspoons of the filling into the center of each wonton wrapper.
Brush the edges of each wrapper with a little water, fold to seal (into a triangle or desired shape), and press edges firmly to close.
Lightly spray the air fryer basket with olive oil spray and arrange wontons in a single layer without overcrowding; work in batches if needed.
Spray the tops of the wontons lightly with olive oil spray and air fry at 400°F for 8–10 minutes, or until golden brown and crisp.
Remove the wontons and serve immediately with ranch or blue cheese dressing if desired.
