Ingredients

  • 4 avocados slightly firm
  • 3 eggs beaten
  • 1/2 cup flour
  • 1 cup panko
  • 1 tablespoon Italian seasoning herb mix
  • 1 teaspoon garlic powder
  • 1 teaspoon salt

Preparation

  • Slice avocados in half, remove pit, and carefully scoop out flesh. Cut into wedges or fries.
  • Set up breading stations: place flour in one bowl, beaten eggs in a second bowl, and mix panko, Italian seasoning, garlic powder, and salt in a third bowl.

Breading and Cooking

  • Dredge each avocado wedge in flour, shake off excess, dip in beaten eggs, then coat with panko mixture, pressing gently to stick.
  • Preheat air fryer to 375°F (190°C) for about 5 minutes.
  • Arrange breaded avocado fries in a single layer in the air fryer basket. Optionally, lightly spray with cooking spray for extra crispiness.
  • Cook for 10-12 minutes, flipping halfway through, until golden brown and crispy.
  • Remove fries from air fryer and serve warm with your favorite dipping sauce.
