Ingredients

  • 1 large egg
  • 1 cup plain panko breadcrumbs
  • 2 large garlic cloves minced
  • 1 tablespoon grated fresh ginger
  • 3 medium scallions finely chopped (greens and whites separated)
  • 2 tablespoons reduced sodium soy sauce plus more for topping
  • 1 pound 93% lean ground turkey
  • Olive oil spray
  • 3 cups cooked brown rice
  • 2 teaspoons sesame oil
  • 2 cups shelled edamame heated
  • Sesame seeds for topping
  • Sriracha sauce optional for topping
  • Fresh cilantro optional for topping

Instructions

  • In a mixing bowl, combine the ground turkey, large egg, panko breadcrumbs, minced garlic, grated ginger, chopped scallion whites, and soy sauce. Mix until just combined without overmixing.
  • Take about 2 tablespoons of the mixture and roll it into a ball. Repeat until all mixture is shaped into meatballs, placing them on a plate or baking sheet.
  • Preheat your air fryer to 375°F (190°C) for about 5 minutes.
  • Spray the air fryer basket with olive oil spray. Place meatballs in a single layer without touching. Cook for 10-12 minutes, turning halfway, until golden brown and cooked through.
  • While meatballs cook, combine cooked brown rice with sesame oil in a saucepan and mix well. Heat the edamame according to package instructions until warmed through.
  • Serve meatballs over sesame-flavored brown rice with a scoop of heated edamame. Drizzle with soy sauce, sprinkle sesame seeds, and optionally add Sriracha sauce and fresh cilantro.

Notes
