Ingredients

  • 2 cans refried beans black or pinto
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 0.5 teaspoon garlic powder
  • 3 avocados peeled and seeded
  • 1 tablespoon lime juice or lemon juice
  • 8 oz sour cream
  • 0.75 cup salsa
  • 1.5 cups shredded Mexican blend cheese cheddar or Monterey Jack
  • 6 ounces sliced black olives
  • 2 green onions chopped
  • 1 roma tomato diced, for garnish, optional
  • tortilla chips for serving

Instructions

Prepare the Beans

  • In a mixing bowl, combine the refried beans, chili powder, ground cumin, and garlic powder. Mix until well combined and smooth.

Mash the Avocados

  • In another bowl, mash the avocados with a fork. Stir in the lime juice to prevent browning and enhance flavor.

Spread the Layers

  • In a large serving dish, start layering your ingredients. Begin with the seasoned refried beans as the base layer.
  • Spread the mashed avocado evenly over the beans, creating a vibrant green layer.
  • Next, spread the sour cream over the avocado layer. You can mix in a bit of lime juice or lime zest for extra flavor.
  • Pour the salsa over the sour cream layer, being careful to cover it evenly.
  • Sprinkle the shredded cheese generously over the salsa, followed by a layer of sliced black olives.
  • Top with chopped green onions for a fresh crunch. If desired, add diced roma tomatoes for an extra pop of color.
