Ingredients

  • 1 loaf French bread cut in half
  • 1 1/2 pounds boneless, skinless chicken breasts cut into 1-inch pieces
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cloves garlic minced
  • 2/3 cup buffalo wing sauce + extra for drizzling
  • 1 tablespoon unsalted butter
  • 3 tablespoons ranch dressing
  • 12 ounces fontina cheese freshly grated
  • 6 ounces crumbled gorgonzola cheese
  • 4 green onions thinly sliced
  • 1 bunch cilantro chopped

Instructions

  • In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the 1 1/2 pounds of cut chicken breasts, season with 1/4 teaspoon salt and 1/4 teaspoon pepper, and cook until the chicken is golden brown and cooked through, about 5-7 minutes.
  • Once the chicken is cooked, add the 2 minced garlic cloves and sauté for an additional 1-2 minutes until fragrant. Then, pour in the 2/3 cup of buffalo wing sauce and stir to coat the chicken evenly. Let it simmer for a couple of minutes to meld the flavors.
  • Preheat your oven to 400°F (200°C). Cut the loaf of French bread in half lengthwise and place it cut-side up on a baking sheet. Drizzle a little olive oil on the bread if desired.
  • Spread the buffalo chicken mixture evenly over the cut sides of the French bread. Top with 12 ounces of freshly grated fontina cheese and 6 ounces of crumbled gorgonzola cheese.
  • Place the baking sheet in the preheated oven and bake for about 10-12 minutes, or until the cheese is melted and bubbly, and the edges of the bread are golden brown.
  • Once out of the oven, drizzle with a little extra buffalo wing sauce, then add 3 tablespoons of ranch dressing, and top with 4 thinly sliced green onions and a handful of chopped cilantro.
